This week I am loving a summer salad recipe, a(nother) podcast, a baby toy and an affordable summer dress that looks expensive!


Mandarin Orange Salad Recipe

I am excited to be bringing this recipe back in rotation! I made it a lot during quarantine last summer. It’s really easy and fresh and light. Sometimes I add chicken too. Try rotisserie chicken if you don’t feel like cooking.

Recipe

4 tablespoons sugar, divided

1/2 cup slivered almonds

1/2 cup vegetable oil

2 tablespoons vinegar

1 tablespoon minced fresh parsley

1/2 teaspoon salt

1/8 teaspoon pepper

1/8 teaspoon hot pepper sauce

1 large bunch of red leaf lettuce, torn

1 can (11 oz) mandarin oranges, drained

1 small red onion, sliced

In a small skillet, melt 3 tablespoons sugar over low heat. To speed it up, turn heat up for a minute but be careful not to burn the sugar! Add almonds; stir until coated. Cool; break into small pieces and set aside.

In a jar with a tight-fitting lid, combine oil, vinegar, parsley, salt, pepper, hot sauce and remaining sugar. Shake well.

Just before serving, combine lettuce, oranges, onion and almonds in a large salad bowl.

Shake dressing; pour over salad and toss.

Yield: 4-6 servings.

Baby Remote

Does your baby insist on putting your remote in his/her mouth? Turns out mine is not the only one. Wyatt loves nothing more than eating our germ infested remotes and cell phones. I haven’t found a true iPhone lookalike but did find this pretty legit looking remote on Amazon and we almost have Wyatt fooled.

What songs are in the latest Top 40? I have no idea because I listen to podcasts exclusively in the car. And in the shower. And while doing work. And while cleaning the house. I can’t stop.

This is a new/first podcast from Gabby Bernstein. Gabby is like . . . part Abraham Hicks, part Tony Robbins, part Elizabeth Gilbert’s Eat, Pray, Love. She’s a motivational speaker, author and self proclaimed “Spirit Junkie.” When I think of her, I think of the word “manifesting”. For those of you who think that stuff is really woo-woo, I encourage you to check out her podcast anyway. She is inspiring and motivational minus the hustle and grind mindset. A more gentle approach to making your dreams come true.

Blue Dress from Amazon

I am not exaggerating when I tell you all I wear mid-May through mid-September is dresses. I don’t think I even own shorts anymore.

Found this one on Amazon and it’s so dang cute for the price ($26.99). I got the small. I’m only 5”0 and the length is pretty perfect on me. Note: it’s a little low-cut so the busty girls might have a hard time with it.
